Steel Cut Oats, Organic Free-range Roosters, and the Scooter Project Progresses!!

Song gave me some steel cut oats to try with my overnight oats recipes. I was not impressed. When I opened the container in the morning they were still hard. But after stirring them again and letting them sit for a few more hours they were soft enough to eat. There are people on the internet who like using steel cut oats in this way but I will stick with rolled or quick oats. I will have to see what happens with instant oats too.

I bought a couple of organic free-range roosters, and rooster feet, from a local farmer. Song and I made rooster soup. And now I'm making rooster stock. Rooster is amazingly gelatinous. The skin and bones are sticky with gelatin and the stock from soup congeals at room temperature. It's fantastic! Before we peeled them the rooster feet looked like dinosaur feet. I'm adding them to the stock.

And finally the parts to install the lift in the van have arrived. I have an appointment to get the lift installed and I may very soon have access to my scooter! The installation place says it will take a 3-4 hours to do the installation. I will bring a book and some snacks. Yippeeee!
