My Dad's Cooking

My mom did most of the cooking while we were growing up.
But there were a few dishes that were my dad's specialties.

Dad's Mackerel Patties

1 (15 1/2 oz.) can mackerel
1 minced, onion
1 c. Saltine cracker crumbs
1-2 lg. eggs
Salt & Pepper
2 Tbsp oil

In a medium bowl mix mackerel, onion, crumbs, and eggs. (The canned mackerel contains bones and skin, don't worry about it just mash it all up)
Shape into patties.
Fry in a large skillet over medium high heat, 3 to 4 minutes per side, until lightly browned.
Serve with lemon juice or mayonnaise.

Zahdé's Fish Cakes

1 can (15.5oz) mackerel (or 2 6oz cans tuna)
1 c. bread crumbs
1 minced, onion
1 medium carrot
1 rib celery
1-2 lg. eggs
1 tsp Honkey Dry Rub (or Season All seasoned salt, or Old Bay seasoning)
2 Tbsp oil

In a food processor make bread crumbs out of 2-3 pieces of stale bread (I use the heel ends). Put the bread crumbs in a mixing bowl.
Coarsely chop the onion, carrot and celery and put them in the food processor with the S-blade. Chop fine. Then add to the mixing bowl with the bread crumbs.
Add the eggs and spices.
Mix in the Mackerel or tuna (The canned mackerel contains bones and skin, don't worry about it just mash it all up)
Shape into patties.
Fry in a large skillet over medium high heat, 3 to 4 minutes per side, until lightly browned.
Serve with lemon juice or mayonnaise.

Dad's Molasses Cake

2 Tbsp vinegar
1 1/2 c milk
2/3 c butter
1 c sugar
2 egg
1 1/2 c dark molasses
4 tsp baking powder
1/2 tsp baking soda
Dash of salt
4 tsp ginger
2 tsp cinnamon
1/2 tsp cloves
4 c flour

Preheat oven to 350°F
Grease 9x18 pan
Add Vinegar to milk and set aside to curdle
Cream butter with sugar.
Whip in the eggs and molasses.
Gradually add the dry ingredients, alternating with the curdled milk until everything is mixed in.
Spread in the pan
Bake for 45-50 minutes, until done.

When it comes to cake my attitude tends to be "If it isn't chocolate why bother." But Dad's Molasses Cake is so dense and moist it is worth making an exception for. (It is even better than Banana Bread)
