Cranberry Relish

Wegmans Fresh Cranberry-Orange Relish
SERVES 10 ACTIVE TIME: 20 min TOTAL TIME: 20 min

1 medium navel orange, rinsed, patted dry (do not peel)
1 package (12 oz) fresh cranberries, rinsed, patted dry
3/4 cup sugar (up to 1 cup)

You'll Need: Food processor

Cut unpeeled orange into eighths; remove seeds.

Place half of cranberries and half of orange sections (including peel) in food processor. Process until mixture is evenly chopped; transfer to bowl. Repeat with remaining cranberries and orange.

Stir in sugar to desired sweetness. Store in refrigerator.

Cooked Whole Cranberry Sauce

Ingredients
1 cup (200 g) sugar
1 cup (255 mL) water
4 cups (1 12-oz package) fresh cranberries

Method
Wash and pick over cranberries.
In a saucepan bring to a boil water and sugar, stirring to dissolve sugar.
Add cranberries, return to a boil.
Reduce heat, simmer for 10 minutes or until cranberries burst.
Remove from heat. Cool completely at room temperature and then chill in refrigerator.
Cranberry sauce will thicken as it cools.

makes 2 1/4 cups.

My sister-in-law make actual stewed cranberries this year, and was shocked at how easy it was. I'm actually up for making them myself sometime.
My recipe uses fresh cranberries, tangerine juice (from the gourmet produce section), honey, raisins, and dried fruit bits. Simmer until cranberries pop. Keeps frozen, or you can can it following standard canning procedures. I impressed a culinary school graduate with it at my family's Thanksgiving last year.
