American Meatloaf recipe

My usual meatloaf recipe is about half meat, half vegetables and bread. My last batch actually rose in the oven. This time I decided to go with a meatier version. I've never done the oatmeal thing before I've always been a bread crumbs type of cook.

American Meatloaf recipe
6lb of ground beef
1.5 cups quick cooking oatmeal
2 pkgs instant onion soup mix
1 cup ketchup
3 eggs

Preheat the oven to 350deg
Mix everything together
Divide in two and place in loaf pans
Bake for 1 hour, or until instant read thermometer reads 160deg


I will be slicing these up and freezing the slices individually for quick meals.

Edit: they are done cooking. Not bad but not significantly better than my vegetable infused version. I think I will go back to cutting the meat with veggies and whole grain bread. There is a bit more flavor and it is better for me.

Um...can you come up with a recipe which doesn't use the bread, since b/f can't have wheat? I'm used to having it with bread, but I need a wheat-free version. Maybe rice?
Rice would be fine but so is the oatmeal I used in this recipe.

The Halupki recipe I just made calls for rice.
I worry that just oatmeal (which can also have wheat in it depending on where it's processed) will be too moist for meatloaf. I'm just not sure of the proportions for such a thing. I have actually been known to make meatloaf, since I applaud anything which is an all-in-one dish, and you add a salad to it and you're done.
You don't use cooked oatmeal, just the dry oats.

If you put enough vegetables in the meatloaf you don't even need the salad :-)
