Cake News

I have decided not to make layer cakes when I need to travel. They keep sliding in transit. I can still make layer cakes while I'm visiting the Seversons, since I have badgered them into buying cake pans.

This evening I made a cake for Mother's Day. The frosting is Coffee flavored this time, using my new frosting recipe. It is very much like the vanilla version, light and fluffy. The chocolate version I made for Buddha's birthday was very heavy and pudding like.

I have found that you can "anchor" the layers by using skewers stuck straight down through the layers, spaced at 2-inch intervals. Pull them out before you serve the cake and smooth the icing over the holes.
