Cooking Away!

Today has been a cooking day.

I finally made the Spanakopitakia recipe I have been working on. When my family has a specific recipe for a dish I use tht for the cookbook. But there are some foods that I'm used to eating at restaurants and not making at home so I have to choose a recipe or come up with one. Spanakopita is one of those. I love Spanakopita but working with phyllo is a bit of a pain so I prefer to order it in restaurants.

I collected a bunch or recipes from all over the internet and read up on "authentic" Greek spanakopita before settling on the materials and method that suits my style of cooking. I made a bunch of Spanakopitakia, little triangular spinach pies and froze them so I cook them as needed.

Then I made a huge pan of lasagna. It's in the oven. I had purchased a 5lb bag of shredded mozzarella for IDK and he ate about quarter cup of it. So I need to use it before it starts to mold. Anyone have any other suggestions for using up mozzarella?

And then I made a loaf of Banana Bread while the oven was hot. I swear I will not buy any more bananas until winter! The fruit flies are driving me crazy!

Yum! Your recipes always sound delicious! You can freeze mozzarella, it will just dehydrate it a little bit. It will melt just fine when baked though. :)
