Mom Was Right About Baked Sweet Potatoes.

I bought a bag of sweet potatoes* when I went shopping the other day.

Yesterday I microwaved one and ate it with butter, salt, pepper, and maple syrup. It was OK. A perfectly ok sweet potato.

Today I baked the rest of them so I could flash freeze them and have baked sweet potatoes whenever I wanted. I did nothing but oil them and stab them with a knife before I put them in the oven. They cooked for about two hours at 325F and I turned them once. I let them cool for a while and then ate one. It was still warm and it tasted delicious. It didn't need anything, No butter, no salt, no anything. But I can see where people got the idea for candied sweet potatoes. The pan was covered with caramelized sweet potato juice. It was just like candy.

Mom was right, baked sweet potatoes are SOOOOOOOOO much better than microwaved or boiled sweet potatoes.





*The orange pointy kind that people around here call yams, even though smart alecks like to point out that they aren't "really" yams.

Sweet potatoes are delicious without the added sweetening. I prefer them that way myself. :-)
The baked one are great. I was just surprised by how mediocre the microwaved one was.
