Chicken with Cashews Recipe

I made Chicken with Cashews for dinner tonight. I don't have a recipe. At least not one I like. So I winged it.

Chicken with Cashews

Ingredients
1 Tbsp canola oil
1 Tbsp sesame oil
1 med onion
2 boneless skinless chicken breasts
Cornstarch
1 tsp ground ginger
1/4 cup pale dry sherry
soy sauce
1 clove garlic
1 small bunch celery (really a whole bunch)
1 cup roasted cashews (unsalted)

Instructions
Put oil in large heavy bottomed skillet.
Chop onion and add to skillet
Chop chicken and dust with cornstarch. Heat skillet and add chicken. Brown the chicken. add the ground ginger. Add the sherry (it really should be sake but I don't have that on hand) and soy sauce (I used a bit too much soy sauce. remember that celery is salty). Dice the garlic and add to the skillet.
Chop the celery and add to the skillet.
When the meat is cooked and the celery is heated through add the cashews, toss, and serve.

About the Dish
I originally thought the celery would need more cooking but it just needs to be heated. It should still have some crunch. This should really be called Chicken and Celery, there is a lot of celery.
