Chicken Florentine

So, another spinach recipe.

Chicken Florentine
Ingredients
2 boneless skinless Chicken Breasts (about 1lb 12oz)
1 med Onion, chopped
1 (10oz) pkg frozen chopped Spinach
1 (5.2oz) pkg Boursin Garlic & Fine Herb Gourney Cheese

Instructions
Cut the chicken onto bite sized pieces and saute in a large skillet.
Add the chopped onion and continue cooking.
Defrost the spinach in the microwave and squeeze out the excess water.
Mix in the spinach and the Boursin cheese to the skillet and heat until the cheese melts.
You can serve this over rice, if you are into that.

About the Dish
This recipe owes a lot to a shrimp dish my friend Mowgli brought to a community meal. I think it started as just a creamed spinach dish, which you can still do if you are a lacto-vegetarian. She added shrimp, which tasted great. And I switched out the shrimp for chicken.

If you don't have Boursin cheese, you can use cream cheese with garlic, salt, white pepper, parsley, and chives. You could also add a bit of chili garlic sauce if you want some heat.
