Barbecue Beef, Bacon, and Bean Casserole

This is a quarter recipe of the bulk recipe from Foodie With Family. I was introduced to this dish by my friend Tracy at an event. Even this quarter version is enough for a lot of people.

Barbeque Beef, Bean, and Bacon Casserole, Quarter Recipe
For the Sauce:
    1/4 cup brown sugar
    1/4 cup ketchup
    1 1/2 teaspoons cider or white wine vinegar
    1/2 teaspoons dried mustard powder
    A few drops liquid smoke (tasty but optional)
    1 cloves garlic, peeled and minced or pressed
    Freshly ground black pepper to taste

To Make the Sauce:
Stir all of the sauce ingredients together in a heavy-bottomed saucepan over medium high heat. Stir frequently until the mixture reaches a boil. Boil for one minute, remove from the heat and set aside.

For the Casserole:
    1/2 pound of sliced bacon
    1/2 pound lean ground beef, venison, or elk
    1 small onion, peeled and finely chopped (or 1 1/2 teaspoons onion powder)
    1/2 cup BBQ sauce (Homemade or Kraft Barbecue Sauce)
    1 cups (or 1 can drained) Butter Beans
    1 cups (or 1 can drained) Pinto Beans
    1 cups (or 1 can with liquid) kidney beans
    1 cups (or 1 can with liquid) pork and beans

To Make the Casserole:
Cut across the bacon slices making 1/2-inch wide strips. In a large skillet, fry the bacon, stirring frequently, until crisp and brown. Use a slotted spoon to transfer the bacon to a paper towel lined plate. Drain the bacon grease from the pan (preferably into a jar and in the refrigerator for adding flavour to other dishes!)
Put the pan back over medium high heat and break up the ground beef into it. If using the onion, add it at this point. Continue breaking it up with a spoon as you cook it until the beef is browned. If necessary, drain any excess fat away from the meat.
Mix in the BBQ sauce, bacon, and beans until well combined.
Continue cooking over medium heat until bubbly and hot all the way through.

If you make it ahead of time for an event you can store it after you mix everything together and when you need it Bake, uncovered, for 1 hour or until very bubbly and hot all the way through.

If you haven't made the BBQ sauce ahead of time you can just add the sauce ingredients to the beef mixture and bring to a simmer before you add the beans.
