Dim Sum, B-day presents, cleaning & cooking.

Ever since I lost my job I haven't been posting as much.

I see my only post on my birthday was a bit of a rant and I haven't said much since.

I had a good birthday. I went to a CUUPs business meeting and then had Dim Sum with friends. It was nice. I had a good day.

My mom sent me a very nice Picasso scarf (and promised me a clothes shopping trip). My favorite cousin sent me a gift certificate for Amazon.com (which I used to purchase "Pagan Theology" by Michael York) she also sent me the sound track to the Triplets of Belleville. My sister Maria sent me two books on writing from my Amazon.com wishlist. "The Art of Fiction: Notes on Craft for Young Writers" by John Gardner and "Steering the Craft: Exercises and Discussions on Story Writing for the Lone Navigator or the Mutinous Crew" by Ursula K. Le Guin Very few people ever send me things from my wishlist.

I have had Dim Sum 4 weekends in a row now. I am very happy about that.

Last week I worked three day counting cars for a city traffic survey. The first day of car counting I was stationed right in front of the library. I droped in to visit them and found out that the woman they hired had never shown up for work. Well... I feel slightly vindicated. If they had hired me at least I would have shown up.

Last Monday I dropped by skitten's house and encouraged her to clean. and the following Friday skitten and blaisepascal dropped by my house and helped me. Then we watched the pilot for Firefly.

Sunday I finally made
My idea for a savory cheesecake.
Crust: 2 sleeves (1/2 lb) Ritz Crackers purried in the food proccessor, 1 sticj (1/2 cup) soffened butter. Mix together, press into a spring form pan, and refridgerate.
Filling: 2 lb small curd cottage cheese, 1 block (8oz) cream cheese, 1 lb cheddar cheese, 3 eggs, 2 Tbs corn starch, chives, onion powder.
Preheat the oven to 400 deg. mx the ingreedeints together and pour into the crust. Bake at 400 deg for 15 min. reduce the tempt to 300 deg. open the oven to let out the hot air and continue cooking for 1 hr. turn off the oven and let stand in the oven for 1 hr.

It is edable. but not terrific. The crust didn't hold together at all, and was a bit too sweet for this project. And the filling was a bit too salty.

I hope the Lime Jello Marshmallow Cottage Cheese Surprise turns out better.

Time moves so strangly when I'm unemployed.

Bummer about the unemployment...my hubbie can relate to the stir crazy feeling that develops when you don't have a job. :( If you ever need some extra green candles, let me know. ;)

Your lime jello creation sounds interesting...I shall keep watch to see what the results are. :)

The LJMCCS turned out fine. This is the second time I have tried this recipe. But the first time in this new mold. I had a bit of trouble getting it out of the mold and it didn't take the shape well. Well it holds it's shape but because it has so much stuff in it the jello wasn't able to keep the nice clean lines of the mold and it looked like an ice cream cake that had been standing out for a while.

J wouldn't even try it. Tammy tried it and thought it was OK but not what she was expecting.

This recipe is really more of a salad than a desert. It is more savory than sweet. Less like jello with fruit in it than like a Waldorf Salad held together with a little bit of jello. I could live on it. Maybe next time I will try it with more jello and see if the mold keeps it's shape better.

Visually, the thought of cottage cheese mixed with green jello I imagine would throw a lot of people off, lol. I'll give it a shot sometime though...always looking for new things. ;)

You can't even see the cottage cheese, or really taste it. The end result looks like soft pistachio ice cream.

Don't leave out the black olives. I hate olives. But the small amount of black olives in this recipe give it a pleasant salty bite that really balances the sweet.
Birthday? *looks back* Oh, I got so caught up in the whole lecture thing that I completely missed the sentence at the end!

Lost the job?? How? You were revolutionizing that office!! What happened? Funding issue?
They changed the job to cover payrole and more accounting tasks and they hired someone with more accounting credentials. They have been very consistant in saying that is the reason they didn't hire me.

They say I was a hard worker and they appriciated all the work I did and how I made an effort participate in the group activities. They have given me *no* reason to believe there was anything I could have done that would have made them keep me, except getting an accounting degree.

what bone heads!!!

There are a few classes you can take online to get that degree. TC3 has a few!
Would you go back there if they'd asked? You could always drop that on them saying you are taking the classes. They start up every month.
