What I have been cooking lately (Reuben Casserole, & Fauxtatoes Deluxe)

Last night I made a Reuben Casserole. Well sort of a Reuben Casserole. I didn't have any corned beef so I used kielbasa Actually I was just trying to find a new recipe for kielbasa. So I chopped up the kielbasa and mixed it with a jar of sauerkraut, a lbs of shredded swiss cheese, 2 Tbsp of mustard and 2 Tbsp of caraway seeds. Then I microwaved it for 10 minutes, and served it with home made Russian dressing (mayonnaise, catsup and horseradish, A recipe I got from a friend's mother at a sleep-over when I was about 10 and never used till this month )

Today I made a Vegetarian Thanksgiving Dinner for B and K. I went to 3 stores looking for a Tofurkey. (They don't have them at P& C or Ludgate's but they do have them at Greenstar.) I have never prepared a Tofurkey before so i did not know that they need to be defrosted and to roast for 3 hours. Luckily for me you can also steam a frozen one on the stove top for 90 minutes. The tofurkey dinner also comes with a tofu jerky "wish stick", "giblet" gravy, and cranberry potato dumplings. I also made fauxtatoes deluxe (cauliflower, cream, cream-cheese, salt & pepper), apple walnut dressing (1 onion, 1 apple, 3 celery stalks, 8ozs of mushrooms, salt pepper, poultry seasoning, butter), low carb cranberry sauce (cranberries, water, Splenda).

The Tofurkey was sort of lame, the stuffing in it was wonderful. K loved the dumplings, I was not as impressed. I think everyone agreed that my Fauxtatoes deluxe were very good.

I'm going to cook my 23 lbs turkey tomorrow when Tammy and Sarrah come over. I want to make mince meat pie as well. I bought a jar of real mince meat. Just about everything I am cooking tomorrow has meat in it. I am making my corn casserole, which sounds vegetarian but the jiffy corn bread mix has lard in it.

I feel good about making a totally vegetarian meal for B. I like doing that for him. I feel like once in a while he deserves a party where he can eat some of everything.

That's what just about everyone I've talked to who has tried one has said. I understand the idea, but I think the big stuffed roasted pumpkin I once got to sample was a much better dramatic center dish for a vegetarian holiday meal.

23 pound turkey! I remember the year I cooked a turkey that big. It was wonderful having all the meat, but it took so long.

Real mince meat. We've been talking about that off and on. I haven't had a real mince meat pie since I was about eight or so.

Mmmmmmmmmmmmm! Corn casserole! I haven't had that in a while (not sure it's the same recipe, but the jiffy corn bread mix is part of it).
