Chicken Livers and Rice

I love chicken livers, I always have, ever since I was a child.

Usually I just salt them and fry them up crunchy.

But I had them this way in a restaurant once and like them so here it is:

Chicken Livers and Rice

1 cup brown basmati rice
salt and pepper
olive oil
1 green bell pepper, diced
1 onion, diced
12 oz mushrooms, quartered
1 (15oz can) diced tomatoes
1/2 cup red wine
chicken livers, chopped
2 Tbsp dry white sherry

1) cook the rice (3 cups water, salt, pepper, olive oil simmer until water is absorbed)
2) saute the green pepper, onion, and mushrooms
3) simmer the vegetables with the tomatoes in the red wine, on low.
4) saute the chicken livers then add them to the vegetable mixture
5) de-glaze the pan with the sherry and pour it into the vegetable mixture.
6) mix in the rice.
7) Serve.

[I also made salad and chocolate mousse for dinner]

Dairy Free Chocolate Mousse

4 eggs separated
1 cup semi-sweet chocolate chips
5 Tbsp boiling water
2 Tbsp Rum (or Kahlua, or Triple Sec)

1) Separate the eggs and beat the whites until stiff.
2) Put the chocolate chips in a blender and blend for 6 sec.
3) Add the boiling water and blend for 10 sec.
4) Add the egg yolks and liquor and blend for 3 sec.
5) Fold the chocolate mixture into the egg whites.
6) Pour into individual bowls and refrigerate for 1 hour (at least).

College Town Bagles sells chocolate mice.
They are delicious.
