Mascarpone Update

I bought heavy cream today and made proper mascarpone. I still didn't cook it. It was Ultra Pasteurized so I figure it was already cooked. When I added the citric acid it coagulated almost instantly. It turned into sour cream. Mascarpone is just condensed sour cream!

I also picked up a couple doz eggs from my egg dealer. They are amazing eggs. They have intense orange yolks.
